Covid baking 😆 It’s been a week! The worst is Covid baking 😆 It’s been a week! The worst is behind me so it’s back in the kitchen catching up with all the zucchini from the garden 😄

Chocolate Zucchini Flax Muffins

1 cup flax seed meal 
1/2 cup almond flour
1/4 cup coconut flour
1/4 cup cocoa powder
1 1/2 teaspoons baking soda
1 scoop protein powder or collagen (optional) 
3/4 teaspoon salt

3 tablespoons coconut oil (melted) 
1 smashed banana
1 teaspoon vanilla
1/2 cup water
5 eggs
1 tablespoon apple cider vinegar
1 cup shredded zucchini (I take a thin dish towel and squeeze out liquid) 

Mix dry ingredients in a large mixing bowl. Mix wet ingredients in separate bowl including zucchini. Add wet ingredients into dry ingredients and stir until combined. Let sit for a few minutes to allow the flax seed meal to absorb some of the liquid. Fill muffins about three-quarter full. I added chocolate chips to half the muffins. These are NOT sweet so feel free to add some honey or maple syrup to batter.  Makes about 15 muffins. Bake at 350° for 20-25 minutes.
